The 2010 documentary film A Matter of Taste: Serving up Paul Liebrandt takes a look inside the world of the talented, well-known and driven young chef, Paul Liebrandt who, at 24, was awarded three stars by The New York Times for such wildly modern dishes as “eel, violets and chocolate,” “espuma of calf brains and foie gras,” and “beer and truffle soup.”
Directed by Sally Rowe, the movie follows Paul over a decade and reveals his creative process in the kitchen, as well as the hard work, long hours, and dedication it takes to be a successful culinary artist in New York City. It also explores the complicated relationships between food critics, chefs and restaurant owners. Talking heads and commentators include food writers Frank Bruni and William Grimes, along with such highly regarded chefs as Thomas Keller, Grant Achatz, Drew Nierporent, Mike Colameco, Eric Ripert and Heston Blumenthal.
A Matter of Taste played a bunch of festivals and premiered on HBO in June, 2012.
Bonus features include the following:
- Extended Interviews with Michelin 3-star chefs Thomas Keller, Eric Ripert & Heston Blumenthal
- Two Short Films about the creation of a Liebrandt dish
